NAC'S SUGAR-FREE, DAIRY-FREE
CREOLE OYSTER STEW
Here's a great recipe for allergy sufferers:
4 dozen oysters and their water
1 stick of soy margarine
1 onion, finely chopped
4 ribs of celery, finely chopped
5 tbs. of flour
2 cups of spring water
3 toes of garlic, minced
1/4 tsp. of powdered thyme
1 and 1/2 pints of rice milk
Dash of pepper sauce
Salt and pepper to taste
4 green onions, finely chopped
2 tbs. minced cilantro
Melt the margarine in a heavy pot over a low fire. Add the onions and celery, and sauté until soft. Sprinkle in the flour, mix well, and cook for 2 to 3 minutes. Add the water, bring the mixture to a simmer, and cook for another five minutes. Add the garlic, thyme, oysters, and oyster liquid. (The oysters and their liquid should add up to about 1 and 1/2 quarts. Add a little water if necessary to make this amount). Cook the oysters until the edges begin to curl. Add the rice milk, salt, pepper and pepper sauce. Let simmer for a couple of minutes, then add the green onions and cilantro. Remove the stew from the heat. Serves four to six.
